I'm an American living in Sweden. The first time I ate potatisgratäng, I thought, "Great! They also have potatoes au gratin", which is one of my favorites. And it was easy to see they had the same origin in name, although in the States we almost never pronounce things as they sound in the original language. Potato casserole is a bit different, from my experience (usually more "cakey") and I've never seen it on any menu. This might have to do with where I am from in the States (east coast). I would dare say that potato casserole also has a more informal tone (something that's slapped together).
As for "bordsplacering", I would say "seating chart". We used the one they give as an example here and called it that. Just because it has the word "chart" in the name, it doesn't literally have to mean tables and charts, just a visual aid for people. Good Luck with everything!
